Jalapeno Stuffed Meatloaf

Sunday was another day to test out a different recipe.  While browsing the web I came across this recipe on smoking-meat.com.  I decided to give it a try and I'm glad I did.  This was the best smoke flavor of all.  The chicken from the day before had a good flavor but not as much as these.

I'll spare you the instructions here, you can look them up on Jeff's site above.  Here are the photos.  I also had some extra jalapenos and stuffing so I made a few ABT's (atomic buffalo turds) for appetizers.  My mother who does not like spicy foods ate 2.

Started with stuffing the peppers and forming the meat mixture around them.

Placed them on a rack so they could absorb maximum smoke.

Atomic Buffalo Turds
I left a little heat in these.

Stuffed with cream cheese mixture.

Wrapped with bacon.

Ready to eat after 3 hours on the smoker.

Everything turned out great.  I'm taking this weekend off since I have too much planned to grill.  I expect I'll be back at it soon though.
